I have long used a flat-bottom whisk and I consider it absolutely essential for smooth sauces and gravy. This is the finest one I have found. It is sturdy and small so that it is ideal for small volumes of liquid. It is far superior to the whisk used to beat egg whites because it keeps the thickening agent from sticking to the bottom of the inside of the pan.
